Sauce Choron
La sauce Choron est une sauce Béarnaise tomatée, additionnée de coulis de tomate, ou d’une fondue de tomate si l’on souhaite conserver des morceaux.
Son nom vient du chef français Alexandre Étienne Choron.
Ingrédients
Préparation de la recette
- Réaliser une Sauce Béarnaise sans ajouter le cerfeuil et l’estragon hachés à la fin.
- Ajouter 2 cuillères à soupe de coulis de tomates.
- Mélanger.
- La sauce Béarnaise doit être ferme pour absorber le coulis de tomate sans trop se détendre.
- On peut aussi ajouter une tomate coupée en petits dés que l’on fera suer rapidement à la poêle, si on veut avoir une sauce avec plus de mâche.
Service
La sauce choron est une sauce émulsionnée chaude tomatée dérivée de la sauce béarnaise.
Conseils
Comme la béarnaise, la sauce choron accompagne avec délice la viande de boeuf... Plus particulièrement le rôti de boeuf ou le rosbeef.
